Ingredients
- Saltto taste
- Onion1, charred
- Ginger3 cm piece, charred
- Fresh Cilantro1/2 cup
- Bay Leaf2
- Spring Onions3, sliced
- Lime2
- Fish Sauce2 tbsp
- Rice Noodles400 g
- Beef300 g thinly sliced + bones/broth base
- Beef Broth8 cups
Optional extras
- Green Chili1, sliced
- Sugar1 tsp
- Bean Sprouts1 cup
- Cinnamon1 stick
Instructions

Char onion and ginger; simmer with beef broth, star-anise vibes (bay/cinnamon), salt and a touch of sugar 60–90 minutes.

Soak or boil rice noodles until tender; divide into bowls.

Ladle hot broth over thinly sliced beef so it cooks gently.

Top with spring onions, cilantro, chili and bean sprouts.

Squeeze lime at the table; add fish sauce to taste.
Chef's tip
Broth must be boiling hot when it hits the raw beef — that's the cook.
