
Green Papaya Fresh Spring Rolls
Warm bread wrapped around savoury green papaya, crunchy salad and a cool sauce — handheld happiness. About 23 minutes from fridge to table.
Ingredients
- Yogurt4 tbsp
- Saltto taste
- Tomato2, sliced
- Mint Leaves1 handful
- Rice Noodles100 g
- Shallots2 cloves, minced
- Flatbread or Tortillas4
- Lettuce1/2, shredded
- Green Papaya1, shredded
- Rice Paper12
- Neutral Oil1 tbsp
Instructions

Season the green papaya with the garlic, salt and half the spices, then cook in the Neutral Oil until browned and juicy.

Warm the flatbreads in a dry pan until soft and pliable, about 30 seconds a side.

Stir the yogurt with a pinch of salt and a squeeze of lime for a quick sauce.

Pile the green papaya onto each bread with lettuce, tomato and the yogurt sauce.

Roll tightly, wrap the bottom half in paper, and eat while the filling is still warm.
Chef's tip
Taste and adjust the salt at the end; sauces concentrate as they reduce.
