Fire-kissed skewers of fish — smoky outside, juicy inside, gone in minutes. About 24 minutes from fridge to table.

Ingredients
- Yogurt3 tbsp
- Garam Masala1 tsp
- Garlic3 cloves, crushed
- Ghee2 tbsp
- Lemon1, juiced
- Fish500 g, firm fillets
- Chaat Masala1 tsp
Optional extras
- Fresh Cilantrohandful, to finish
Instructions

Whisk the yogurt, ghee, garlic, garam masala and lemon juice into a marinade.

Cut the fish into even 3 cm chunks and coat well; marinate 30 minutes minimum.

Thread onto skewers with a little space between pieces so the heat can circulate.

Grill over high heat, turning every few minutes, until charred at the edges and cooked inside.

Slide off the skewers, rest 3 minutes, and dust with fresh cilantro.
