
Classic Hummus
Impossibly smooth chickpea-tahini puree with lemon, garlic and a pool of olive oil — the Levant's gift to the world.
Ingredients
- Salt1/2 tsp
- Garlic3 cloves
- Chickpeas2 cans (400 g each)
- Lemon2, juiced
- Olive Oil3 tbsp + drizzle
- Ground Cumin1/2 tsp
- Tahini1/2 cup
- Paprika1/2 tsp for garnish
- Fresh Parsley2 tbsp, chopped
- Pita Breadfor serving
Instructions

Simmer the canned chickpeas with 1/2 tsp baking soda (or just their liquid) for 8-10 minutes until soft and swelling.

Blend tahini, lemon juice and garlic alone first, 1 minute, until it pales and thickens.

Add the warm drained chickpeas and blend a full 3-4 minutes — patience makes the silk.

With the motor running, trickle in ice-cold water 1 tbsp at a time until the texture is cloud-like.

Season with cumin and salt. Spread on a plate with a spoon-swirl, pooling olive oil in the groove.

Dust with paprika and parsley. Serve with warm pita.
Chef's tip
Warm chickpeas blend dramatically smoother than cold — never skip the simmer step even with canned beans.
