
Greek Salad
No lettuce, no apology — just sun-ripened tomatoes, crisp cucumber, olives and a proud slab of feta under oregano and olive oil.
Ingredients
- Salt1/2 tsp
- Tomato4, cut into wedges
- Bell Pepper1, sliced
- Olive Oil4 tbsp, extra virgin
- Dried Oregano1 tsp, Greek if possible
- Vinegar1 tbsp (red wine vinegar)
- Cucumber1, thick half-moons
- Red Onion1, thinly sliced
- Feta Cheese200 g, one thick slab
- Kalamata Olives1 cup
Instructions

Soak the sliced red onion in cold water for 10 minutes to tame its sharpness, then drain.

Place tomato wedges, cucumber, bell pepper and onion in a wide, shallow bowl — never a deep one.

Sprinkle with salt and half the oregano, then dress with vinegar and most of the olive oil. Toss gently once.

Lay the feta on top as one whole slab — breaking it crumbles the texture and the tradition.

Shower the feta with the remaining oregano and finish with the last of the olive oil.

Serve immediately with bread to mop the famous juice at the bottom of the bowl.
Chef's tip
In Greece the feta stays whole and un-tossed — everyone breaks off pieces with their fork as they eat.
