
Fluffy Buttermilk-Style Pancakes
Tall, cloud-soft pancakes with golden buttery edges — the weekend breakfast that needs only pantry staples.
Ingredients
- Butter3 tbsp, melted
- Salt1/2 tsp
- Eggs2
- Milk1.5 cups
- All-Purpose Flour2 cups
- Sugar3 tbsp
- Baking Powder2 tsp
- Vanilla Extract1 tsp
- Maple Syrupfor serving
- Blueberries1/2 cup
Instructions

Whisk flour, sugar, baking powder and salt in a large bowl.

In another bowl, beat eggs with milk, melted butter and vanilla.

Pour wet into dry and stir until just combined — lumps are good. Overmixing makes rubbery pancakes.

Rest the batter 5 minutes while the pan heats on medium-low. A drop of water should dance on the surface.

Ladle 1/4 cup rounds onto a buttered pan. Scatter blueberries on top if using.

Flip when bubbles pop on the surface and the edges look matte, about 2 minutes. Cook 1-2 minutes more until golden.

Stack high, crown with butter and flood with warm maple syrup.
