
Caesar Salad
Crisp romaine tossed in a punchy garlicky dressing with toasted croutons and snowfall of parmesan — a 1924 Tijuana original.
Ingredients

- Garlic2 cloves, minced
- Lemon1, juiced
- Olive Oil1 tbsp
- Parmesan Cheese1/2 cup, grated
- Black Peppercorns1/2 tsp, cracked
- Romaine Lettuce2 hearts, torn
- Croutons2 cups, day-old bread cubed
- Mayonnaise1/2 cup
- Worcestershire Sauce1 tsp
- Dijon Mustard1 tsp
- Anchovy Paste1 tsp
Instructions

Make croutons: toss bread cubes with olive oil and salt, bake at 190°C (375°F) for 10 minutes until golden.

Whisk mayonnaise, lemon juice, garlic, Worcestershire, Dijon and anchovy paste with 2 tbsp cold water until pourable.

Season the dressing with salt and cracked pepper. Taste — it should be boldly salty, garlicky and bright.

Chill the romaine and the bowl if possible — a cold Caesar is a crisp Caesar.

Toss lettuce with just enough dressing to coat every leaf, reserving some for serving.

Add croutons and half the parmesan, toss once more, then plate and snow the rest of the parmesan on top.
Chef's tip
Dress the lettuce 1 minute before serving, never earlier — dressed romaine wilts with heartbreaking speed.
