Southern White Fish Stir-Fry

Skillet cooking, American-style: a screaming cast-iron pan, White Fish crusted hard in butter and oil, and a quick pan sauce built from the drippings. Hearty, fast and full of flavour.

Ingredients

  • Butter2 tbsp
  • Saltto taste
  • Garlic4 cloves, minced
  • Bell Pepper1, sliced
  • Spring Onions3, cut into batons
  • Soy Sauce2 tbsp
  • Broccoli200 g
  • White Fish500 g
  • Ketchup2 tbsp
  • Smoked Paprika1 tsp

Optional extras

  • Fresh Parsleyhandful, to finish

Instructions

    Preheat a cast-iron skillet over medium-high heat until it just starts to smoke; add the oil.

    Season the White Fish generously on both sides and sear undisturbed until a deep crust forms, about three minutes.

    Flip and add the butter, basting as it foams with Garlic for another two to three minutes.

    Move the White Fish to a plate and soften Smoked Paprika in the pan drippings, scraping the crusty bits loose.

    Deglaze with a splash of stock or water and reduce to a quick pan sauce, seasoning to taste.

  6. 6

    Rest the White Fish, then serve smothered in the pan sauce with the buttery drippings pooled over.
