Jamaican Beef Soup

Gentle simmered beef in a fragrant broth, finished with fresh herbs — the caribbean answer to "something light tonight". About 40 minutes from fridge to table.

Ingredients

  • Saltto taste
  • Onion1, diced
  • Garlic3 cloves, minced
  • Stock or Broth1 litre
  • Beef500 g
  • Coconut Oil1 tbsp
  • Allspice1/2 tsp
  • Fresh Thymesmall handful
  • Yam300 g
  • Dumplings100 g

Instructions

    Sweat the onion in the Coconut Oil until translucent but not browned, about 5 minutes.

    Add the garlic and allspice and cook for 30 seconds more.

  3. 3

    Pour in the stock, bring to a simmer, and add the beef.

  4. 4

    Simmer gently until the beef is just cooked through and the broth tastes rounded.

    Ladle into warm bowls and top each with fresh thyme and a grind of black pepper.

Chef's tip

Let the dish rest 5 minutes off the heat before serving so the flavours settle.
