Instructions
- 1
Season the Goat the night before if you can — green seasoning, salt, a scatter of scotch bonnet — and let it marinate.
- 2
Heat the oil in a heavy pot and burn the sugar to a dark caramel (careful: dark brown, not black) for the authentic stew base.
- 3
Add the Goat immediately and turn to coat in the burnt sugar, searing until sealed.
- 4
Add Coconut Oil and Garlic with the herbs and a splash of water, scraping the pot base.
- 5
Cover and simmer on a low flame until the Goat is tender and the sauce has reduced and darkened.
- 6
Serve hot with rice and peas, with the thick sauce spooned over everything.
Chef's tip
Let the dish rest 5 minutes off the heat before serving so the flavours settle.
