Gentle simmered potato in a fragrant broth, finished with fresh herbs — the brazilian answer to "something light tonight". Ready in 30 minutes including prep.

Ingredients

- Onion1, diced
- Garlic3 cloves, minced
- Fresh Cilantrosmall handful
- Potato4
- Stock or Broth1 litre
- Smoked Paprika1/2 tsp
- Leek1
- Palm Oil1 tbsp
Instructions

Sweat the onion in the Palm Oil until translucent but not browned, about 5 minutes.

Add the garlic and smoked paprika and cook for 30 seconds more.

Pour in the stock, bring to a simmer, and add the potato.

Simmer gently until the potato is just cooked through and the broth tastes rounded.

Ladle into warm bowls and top each with fresh cilantro and a grind of black pepper.
