Gentle simmered brazilian sausage in a fragrant broth, finished with fresh herbs — the brazilian answer to "something light tonight". About 40 minutes from fridge to table.

Ingredients

- Onion1, diced
- Garlic3 cloves, minced
- Fresh Cilantrosmall handful
- Potato3
- Stock or Broth1 litre
- Smoked Paprika1/2 tsp
- Palm Oil1 tbsp
- Brazilian Sausage300 g
- Collard Greens200 g, shredded
Instructions

Sweat the onion in the Palm Oil until translucent but not browned, about 5 minutes.

Add the garlic and smoked paprika and cook for 30 seconds more.

Pour in the stock, bring to a simmer, and add the brazilian sausage.

Simmer gently until the brazilian sausage is just cooked through and the broth tastes rounded.

Ladle into warm bowls and top each with fresh cilantro and a grind of black pepper.
