Eggplant Meze

A creamy, swooshable turkish dip built around eggplant — built for torn bread and long evenings. 10 minutes of mostly hands-off cooking.

Ingredients

  • Saltto taste
  • Garlic2 cloves, grated
  • Lemon1/2, juiced
  • Olive Oil3 tbsp, good and fruity
  • Fresh Parsley1 handful
  • Eggplant3 large
  • Urfa Pepper Flakes1/2 tsp

Instructions

    Prepare the eggplant — roast, boil or mash it depending on what it is, until completely soft.

    Beat it smooth with the olive oil, adding it in a slow stream for a silky texture.

  3. 3

    Season with the garlic, lemon juice, urfa pepper flakes and salt — taste as you go.

    Swoosh onto a plate with a spoon-back of oil, a sprinkle of fresh parsley, and serve with warm bread.

Chef's tip

Taste and adjust the salt at the end; sauces concentrate as they reduce.
