Ingredients

  • Ginger Garlic Paste1 tbsp
  • Garam Masala1/2 tsp
  • Saltto taste
  • Turmeric Powder1/2 tsp
  • Potato2
  • Chaat Masala1 tsp
  • Red Chili Powder1 tsp
  • Flatbread250 g, chopped

Optional extras

  • Mint Leavesfor the hari chutney
  • Fresh Cilantrofor the hari chutney
  • Tamarind Paste2 tbsp, for the meethi chutney
  • Jaggery1 tbsp, for the meethi chutney

Instructions

    Cook the filling with the masalas until thick and glossy; it should not run.

    Warm the flatbread, then (for the classic version) dip in beaten egg and cook on the tawa until just set.

    Pile the filling down the centre with sliced onion, a squeeze of lime and the chutneys.

    Roll tightly, wrap the bottom half in paper, and hand it over hot.

Chef's tip

Chaat is a race against sogginess — assemble at the last second.
