Slow-reduced milk, softened sweetness and cardamom — the celebration bowl that ends every good Indian meal. 50 minutes of mostly hands-off cooking.

Ingredients

  • Ghee3 tbsp
  • Sugar1 cup
  • Coconut Milk2 cups
  • Rice Flour1.5 cups, prepared
  • Jaggery1 cup

Optional extras

  • Golden Raisins2 tbsp
  • Almonds2 tbsp, slivered
  • Green Cardamom3, crushed

Instructions

    Bring the milk to a gentle boil and reduce it for 10 minutes, stirring so it never catches.

    Add the rice flour and cook until soft and the milk thickens around it.

    Sweeten with sugar, then finish with cardamom and saffron if using.

    Garnish with almonds and raisins; serve warm or chilled — both are correct.
