
Mushrooms Pasta
Springy noodles, tender mushrooms and a savoury-sweet glaze, tossed together in minutes. 17 minutes of mostly hands-off cooking.
Ingredients

- Garlic3 cloves, minced
- Tomato Sauce2 tbsp
- Olive Oil2 tbsp
- Parmesan Cheese60 g, grated
- Spaghetti320 g
- Mushrooms400 g, sliced
- Spring Onions3, sliced
- Noodles250 g

- Fresh Basilhandful, to finish
Instructions

Get the pasta water salty and rolling before the Mushrooms goes in — crowded noodles in weak water is the one unforgivable sin.

In a wide pan, warm the oil and let Noodles turn translucent and sweet without taking any colour.

Stir through Garlic, toasting it briefly, then lower the heat to a murmur.

Lift the Mushrooms out a minute early, straight into the pan, bringing its starchy water along for the ride.

Emulsify: shake and toss the pan hard so water, oil and starch combine into a sauce that looks almost creamy.

Taste, adjust salt, and serve immediately with cheese passed at the table.

Taste and adjust the salt at the end; sauces concentrate as they reduce.
