
Shrimp Pasta
Springy noodles, tender shrimp and a savoury-sweet glaze, tossed together in minutes. About 14 minutes from fridge to table.

- Olive Oil2 tbsp
- Parmesan Cheese60 g, grated
- Spaghetti320 g
- Spring Onions3, sliced
- Shrimp400 g
- Noodles250 g

Instructions

Start the Shrimp in a big pot of salted boiling water and preheat your serving bowls — cold plates kill a pasta dish.

Soften Noodles in butter and oil together; the butter carries flavour, the oil stops it burning.

Add Garlic and a ladle of pasta water, and let it reduce to a spoon-coating sauce.

Drain the Shrimp a minute shy and finish it in the sauce over brisk heat for a full minute of tossing.

Check the texture: the sauce should ripple slowly, not run, and every piece should shine.

Serve showered with cheese and black pepper, bowls warm, no delay.
Chef's tip
For deeper flavour, toast the dried oregano in the oil before adding anything wet.
