Chicken Pizza
Wood-oven style pizza crowned with chicken over blistered, chewy dough. 58 minutes of mostly hands-off cooking.
Ingredients
- Chicken500 g, thighs
- Heavy Cream200 ml
- Saltto taste
- Onion1, sliced into rings
- Pizza Dough500 g
- Mozzarella Cheese200 g
- Olive Oil1 tbsp, for the dish
- Dried Oregano1 tsp
- Cheese100 g, grated
Optional extras
- Fresh Basilhandful, to finish
Instructions
- 1
Heat the oven as hot as it will go (at least 240°C) with the tray or stone pre-heating for half an hour — patience here is the whole recipe.
- 2
Press the dough out gently from the middle outwards, letting gravity help, until thin in the centre with a puffy border.
- 3
Spoon the sauce over thinly, then distribute the Chicken and Onion so every slice gets its fair share.
- 4
Top with cheese pulled into small pieces rather than grated — it melts into pools instead of a sheet.
- 5
Bake 7-9 minutes, rotating once, until the crust is leopard-spotted and the cheese is bubbling in earnest.
- 6
Rest for one minute, shower with Heavy Cream, cut with scissors or a wheel, and eat at once — pizza waits for no one.
Chef's tip
Every oven runs hot or cold; start checking 5 minutes early.
