Artichoke Pizza
Wood-oven style pizza crowned with artichoke over blistered, chewy dough. 48 minutes of mostly hands-off cooking.
Ingredients
- Heavy Cream200 ml
- Saltto taste
- Onion1, sliced into rings
- Pizza Dough500 g
- Mozzarella Cheese200 g
- Olive Oil1 tbsp, for the dish
- Dried Oregano1 tsp
- Cheese100 g, grated
- Artichoke4, trimmed
Optional extras
- Fresh Basilhandful, to finish
Instructions
- 1
Crank the oven to its limit with an upturned baking tray heating inside — the pizza bakes on the underside of it.
- 2
Shape the dough with flat fingers into a round slightly smaller than the tray, thin in the middle with a fat rim.
- 3
Sauce it thinly, then lay the Artichoke and Onion across, and tear the cheese over the top.
- 4
Slide the pizza onto the hot tray — a confident shake first confirms it isn't sticking.
- 5
Bake 7-9 minutes until the rim is deeply golden and the underside is crisp enough to knock on.
- 6
Finish with Heavy Cream and a crack of pepper; slice immediately and serve from the board.
Chef's tip
Every oven runs hot or cold; start checking 5 minutes early.
