Italy's fritto misto star — squid rings in a paper-thin crust, fried for exactly the right amount of time and not one second more. Lemon, salt, and the eternal quest for the perfect second ring.

Ingredients
- Salt1.5 tsp
- Vegetable Oilfor deep frying
- All-Purpose Flour3/4 cup
- Cornstarch1/4 cup
- Squid500 g, cleaned and ringed
- Black Pepper1/2 tsp
Optional extras
- Lemon1, wedges
- Eggs1, for the wash
- Breadcrumbs1/2 cup
Instructions

Dry the squid rings thoroughly on cloth.

Toss in seasoned flour-cornstarch mix; shake off excess.

Fry small batches at 190°C for 90 seconds to 2 minutes only.

Drain on racks, not paper.

Salt immediately; serve with lemon wedges.

Ninety seconds is not a suggestion — squid turns from tender to rubber between one and two minutes.
