
Zunka Bhakar Style Pitla Sabzi
Besan set into soft rubble with onion and chilli, the zunka that partners bhakri. Simple, spiced straight-talk food — no gravy to hide behind. Pile beside phulka and a bowl of cooled yogurt.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion2, finely sliced
- Tomato2, chopped
- Garlic6 cloves
- Green Chili2
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Gram Flour1 cup
- Red Chili Powder1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped

Dice the gram flour uniformly, toss with a pinch of salt and let it sit while the masala comes together.

Warm the oil, add cumin and a pinch of asafoetida, then the onions — cook till bronzed at the edges.

Stir in ginger garlic paste and green chili; after a minute add the ground spices with a splash of water so they don't scorch.

Add the gram flour and the onion, toss to coat in the masala, cover and cook on low, stirring twice, until tender.

Uncover, raise the heat for two minutes to dry off any liquid, then shower with cilantro and a squeeze of lemon.

Don't crowd the pan; steam is the enemy of the browning that builds flavour.
