
Dondakaya Nuvvula Karam
Ivy gourd tossed in roasted sesame chilli powder, the fiery Telugu nuvvula karam. The kind of homely bhaji that disappears fastest off the thali. Best mopped up with hot chapatis straight off the flame.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Green Chili2
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Red Chili Powder1 tsp
- Peanut Oil1 cup, chopped
- Sesame Seeds1 tsp
- Ivy Gourd (Kovakkai)2 cups, slit
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Wash and cut the ivy gourd (kovakkai) into even, bite-size pieces so everything cooks at the same pace.

Heat oil in a wide kadhai and crackle cumin seeds; fry the onions till lightly golden.

Stir in ginger garlic paste and green chili; after a minute add the ground spices with a splash of water so they don't scorch.

Add the ivy gourd (kovakkai) and the sesame seeds, toss to coat in the masala, cover and cook on low, stirring twice, until tender.

Kill the heat, stir through the cilantro and the green chili, and rest five minutes before serving.
Chef's tip
A final squeeze of lemon or lime right before serving wakes up every other flavour.
