
Narkel Diye Cholar Dal
Bengal gram dal with coconut and raisins, the Bengali cholar dal for luchi mornings. Humble dal, done properly, beats most fancy curries. Perfect with jeera rice and papad on the side.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Ginger2-inch piece
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Ghee2 tbsp
- Chickpeas1 cup, soaked overnight
- Turmeric Powder1/2 tsp
- Grated Coconut1 cup
Optional extras
- Fresh Cilantro2 tbsp, chopped
- Golden Raisins2 tbsp
Instructions

Cook the chickpeas in a generous amount of water with turmeric and salt, skimming the foam, until each grain surrenders.

Mash the dal lightly against the side of the pot; leave some texture.

Heat ghee in a small pan and crackle cumin with a pinch of asafoetida; add the onions and fry till golden.

Build a quick masala of the grated coconut in the tadka pan, let it sizzle into the ghee, and stir it through the dal.

Finish with a second tiny tadka — ghee, red chili powder, poured sizzling over the top — and a shower of cilantro.
Chef's tip
Don't crowd the pan; steam is the enemy of the browning that builds flavour.
