Assamese Aloo Pitika Jhol
Light Assamese potato curry with raw mustard oil punch, comfort in a bowl. Restaurant comfort, home kitchen effort — the masala does the heavy lifting. Ladle over steamed rice with sliced onions on the side.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1 tsp
- Saltto taste
- Onion2, finely chopped
- Tomato3, chopped
- Ginger2-inch piece
- Green Chili2
- Coriander Powder2 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil3 tbsp
- Potato3 medium, cubed
- Red Chili Powder1 tsp
- Mustard Oil1 tsp
Optional extras
- Kasuri Methi1 tsp
- Fresh Cilantro2 tbsp, chopped

Heat oil in a heavy pot and brown the onions deeply — this patience is the whole flavour base.

Add ginger garlic paste with a splash of water and scrape up the browned bits.

Cook the tomato down into the spices, wetting with water a spoon at a time, to a thick red masala.

Turn the potato through the masala with the mustard oil, add warm water and bring to a gentle simmer.

Kill the heat and let it sit; finish with cilantro and a squeeze of lemon at the table.
Chef's tip
Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
