Mangalorean Kooka Song
Mangalorean yam-potato song, fiery tamarind curry with a chilli-red glow. A proper gravy curry — the kind that demands something bread-shaped for mopping. Serve with jeera rice or flaky parathas.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1 tsp
- Saltto taste
- Onion2, finely chopped
- Tomato3, chopped
- Green Chili2, slit
- Coriander Powder2 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil3 tbsp
- Potato3 medium, cubed
- Dried Red Chilies1 tsp
- Tamarind Paste2 tbsp
- Red Chili Powder1 tsp
- Yam300 g, cubed
Optional extras
- Kasuri Methi1 tsp
- Fresh Cilantro2 tbsp, chopped
Instructions

Heat oil in a heavy pot and brown the onions deeply — this patience is the whole flavour base.

Add ginger garlic paste and green chili; stir till the raw smell disappears.

Cook the tomato down into the spices, wetting with water a spoon at a time, to a thick red masala.

Turn the potato through the masala with the yam, add warm water and bring to a gentle simmer.

Finish with garam masala, a crush of kasuri methi and fresh cilantro; rest five minutes off the heat.
Chef's tip
Whisked yogurt goes in off the heat or it will split.
