
Langar Di Dal
Slow-simmered whole urad with chana, the langar-style dal with butter finish. The everyday pot of gold that anchors every Indian thali. Perfect with jeera rice and papad on the side.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Butter3 tbsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Ginger2-inch piece
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Ghee2 tbsp
- Chickpeas1 cup, soaked overnight
- Turmeric Powder1/2 tsp
- Urad Dal1 cup
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Rinse the urad dal in several changes of water till it runs clear, then pressure-cook with turmeric, salt and plenty of water until completely soft.

Mash the dal lightly against the side of the pot; leave some texture.

Warm the ghee, drop in cumin and mustard seeds if using, and let them pop before the onions go in.

Fry tomato with the chickpeas until it collapses into the fat, then pour the whole thing over the simmering dal.

Taste for salt and sourness; a squeeze of lemon at the end makes the dal taste of itself, only louder.
Chef's tip
A final squeeze of lemon or lime right before serving wakes up every other flavour.
