
Dal Mewa Style Kaju Dal
Toor dal enriched with cashews and raisins, the mewa dal of Marwari feasts. Humble dal, done properly, beats most fancy curries. Pour over rice or dunk rotis straight into the bowl.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Ghee3 tbsp
- Turmeric Powder1/2 tsp
- Yellow Lentils (Toor Dal)1 cup, rinsed
- Cashews1/4 cup
- Golden Raisins2 tbsp
Optional extras
- Fresh Cilantro2 tbsp, chopped

Rinse the yellow lentils (toor dal) in several changes of water till it runs clear, then pressure-cook with turmeric, salt and plenty of water until completely soft.

Whisk the cooked dal till smooth-ish and keep it loose — it thickens as it sits.

Warm the ghee, drop in cumin and mustard seeds if using, and let them pop before the onions go in.

Build a quick masala of the cashews in the tadka pan, let it sizzle into the ghee, and stir it through the dal.

Taste for salt and sourness; a squeeze of lemon at the end makes the dal taste of itself, only louder.

Fresh spices make the dish — if yours smell of nothing, the dish will taste of nothing.
