Slippery wheat noodles slicked with fragrant chili oil, garlic, soy and vinegar — the five-minute bowl that hits every craving.

Ingredients
- Garlic4 cloves, minced
- Spring Onions2, sliced
- Soy Sauce2 tbsp
- Sesame Oil1 tsp
- Sichuan Peppercorns1/2 tsp
- Rice Vinegar1 tbsp
- Wheat Noodles200 g
- Neutral Oil1/4 cup
- Chili Flakes2 tbsp
Optional extras
- Crushed Peanuts2 tbsp
Instructions

Boil noodles until just tender; drain, reserving a splash of cooking water.

Warm chili flakes, minced garlic and Sichuan peppercorns in a heatproof bowl.

Pour smoking-hot oil over the aromatics to bloom them.

Stir in soy sauce, black vinegar (or rice vinegar), sesame oil and a pinch of sugar.

Toss noodles with the chili oil and cooking water; finish with spring onions and crushed peanuts.
Chef's tip
The oil must be smoking — lukewarm oil won't bloom the chili and garlic.
