Springy noodles tossed with cabbage, carrots and a savory soy-oyster glaze — wok hei in a weeknight pan.

Ingredients

  • Garlic3 cloves minced
  • Bell Pepper1, sliced
  • Carrot1, julienned
  • Cabbage2 cups shredded
  • Soy Sauce3 tbsp
  • Sesame Oil1 tsp
  • Chow Mein Noodles300 g
  • Oyster Sauce1 tbsp
  • Neutral Oil2 tbsp

Optional extras

  • Saltto taste
  • Spring Onions2, sliced
  • White Pepperpinch

Instructions

    Boil chow mein noodles until just tender; drain and toss with a drop of oil.

    Stir-fry garlic, cabbage, carrot and bell pepper hot and fast.

    Add noodles; pour soy, oyster sauce and a splash of water.

    Toss until noodles are coated and lightly charred at the edges.

    Finish with spring onions and sesame oil.

Chef's tip

High heat and a roomy pan — crowding steams the noodles instead of searing them.
