Guajillo-braised beef shredded into crispy cheese-edged tacos, dunked in rich red consommé — the taco that broke the internet.

Ingredients
- Salt2 tsp
- Onion1 + extra for garnish
- Garlic6 cloves
- Bay Leaf2
- Corn Tortillas12
- Lime2, wedges
- Ground Cumin1 tsp
- Beef1 kg chuck or short rib
- Dried Guajillo Chilies6–8
- Beef Broth3 cups
Optional extras
- Fresh Cilantro1/4 cup
- Mozzarella Cheese1 cup, shredded
Instructions

Toast dried guajillo chilies; blend with garlic, onion, cumin and broth into a marinade.

Braise beef in the chili broth with bay leaf for 2.5–3 hours until shreddable.

Shred meat; reserve strained consommé for dipping.

Dip corn tortillas in the fat, fill with meat and cheese, and griddle until crisp.

Serve with consommé, onion, cilantro and lime.
Chef's tip
Don't skip frying the dipped tortilla — that crispy cheese edge is the whole point.
