Yogurt-based mor kuzhambu — gently spiced buttermilk gravy with ash gourd or okra, thickened with coconut-cumin paste. Sour, cooling, rice-perfect.

Ingredients
- Yogurt2 cups, whisked
- Saltto taste
- Green Chili2
- Cumin Seeds1 tsp
- Turmeric Powder1/4 tsp
- Vegetable Oil2 tbsp
- Fenugreek Seeds1/4 tsp
- Mustard Seeds1 tsp
- Curry Leaves1 sprig
- Okra150 g (vendakkai) or ash gourd
- Grated Coconut1/2 cup
Optional extras
- Rice Flour1 tsp optional thickener
Instructions

Whisk yogurt/buttermilk smooth with turmeric and salt; keep ready.

Grind coconut with cumin, green chili and a little soaked rice or dal for body.

Cook vegetable (okra lightly sautéed, or ash gourd boiled) until tender.

Add ground paste; simmer.

Lower heat; stir in yogurt mix — do not boil hard. Temper mustard, fenugreek and curry leaves in oil; finish.
Chef's tip
Boiling after yogurt goes in will curdle the kuzhambu — keep it just below a simmer.
