South Indian filter coffee — decoction dripped through a brass filter, frothed with boiled milk into a davara-tumbler roar.

Ingredients

  • Milk2 cups
  • Sugar2–3 tsp or to taste
  • Instant Coffee4 tbsp South Indian filter coffee powder

Instructions

    Pack medium-coarse filter-coffee powder into the upper chamber; tamp lightly.

    Pour boiling water; let decoction drip 10–15 minutes.

  3. 3

    Boil milk; mix with decoction and sugar to taste.

  4. 4

    Pull between tumbler and davara until frothy and cooling.

  5. 5

    Serve immediately — hot, strong, fragrant.

Chef's tip

A light tamp only — pack too hard and the decoction never drips.
