Kuzhi paniyaram — crisp-edged, soft-centered batter balls from leftover idli/dosa batter, studded with onion and curry leaves.

Ingredients
- Saltto taste
- Onion1, finely chopped
- Ginger1 tsp minced
- Green Chili2, minced
- Vegetable Oilfor the pan
- Curry Leaves1 sprig, chopped
- Rice Flour1 cup (or fermented idli batter 2 cups)
Optional extras
- Fresh Cilantro2 tbsp
- Urad Dal1/4 cup if making fresh batter
- Mustard Seeds1/2 tsp tempered in
- Yellow Moong Dal2 tbsp optional
Instructions

Mix idli/dosa-style batter with finely chopped onion, green chili, ginger and curry leaves.

Heat a paniyaram pan; oil each mould lightly.

Spoon batter into moulds; cook until bottoms set and gold.

Flip with a skewer; cook the other side.
- 5
Serve hot with chutney and sambar.
Chef's tip
Medium heat — too hot and the outside burns before the center cooks.
