Chicken Sate Skewers

Marinated chunks of chicken on skewers, charred over high heat and showered with herbs. 37 minutes of mostly hands-off cooking.

Ingredients

  • Chicken500 g
  • Yogurt3 tbsp
  • White Pepper1 tsp
  • Lime1, juiced
  • Shallots3 cloves, crushed
  • Lemongrass2 stalks
  • Curry Powder1 tsp
  • Neutral Oil2 tbsp
  • Crushed Peanuts50 g

Optional extras

  • Mint Leaveshandful, to finish

Instructions

    Whisk the yogurt, neutral oil, garlic, white pepper and lime juice into a marinade.

    Cut the chicken into even 3 cm chunks and coat well; marinate 30 minutes minimum.

    Thread onto skewers with a little space between pieces so the heat can circulate.

  4. 4

    Grill over high heat, turning every few minutes, until charred at the edges and cooked inside.

  5. 5

    Slide off the skewers, rest 3 minutes, and dust with mint leaves.

Chef's tip

Taste and adjust the salt at the end; sauces concentrate as they reduce.
