Levantine Lamb Kebab

Fire-kissed skewers of lamb — smoky outside, juicy inside, gone in minutes. About 37 minutes from fridge to table.

Ingredients

  • Yogurt3 tbsp
  • Garlic3 cloves, crushed
  • Bell Pepper2
  • Lemon1, juiced
  • Olive Oil2 tbsp
  • Ground Cumin1 tsp
  • Paprika1 tsp
  • Red Onion1
  • Lamb500 g, cubed

Optional extras

  • Fresh Parsleyhandful, to finish

Instructions

    Whisk the yogurt, olive oil, garlic, ground cumin and lemon juice into a marinade.

    Cut the lamb into even 3 cm chunks and coat well; marinate 30 minutes minimum.

    Thread onto skewers with a little space between pieces so the heat can circulate.

    Grill over high heat, turning every few minutes, until charred at the edges and cooked inside.

    Slide off the skewers, rest 3 minutes, and dust with fresh parsley.

Chef's tip

Let the dish rest 5 minutes off the heat before serving so the flavours settle.
