Bacon Hash
Skillet cooking, American-style: a screaming cast-iron pan, Bacon crusted hard in butter and oil, and a quick pan sauce built from the drippings. Hearty, fast and full of flavour.

- Bell Pepper1, sliced
- Eggs4, fried
- Bacon250 g

- Fresh Parsleyhandful, to finish
Instructions
- 1
Preheat a cast-iron skillet over medium-high heat until it just starts to smoke; add the oil.
- 2
Season the Bacon generously on both sides and sear undisturbed until a deep crust forms, about three minutes.
- 3
Flip and add the butter, basting as it foams with Garlic for another two to three minutes.
- 4
Move the Bacon to a plate and soften Smoked Paprika in the pan drippings, scraping the crusty bits loose.
- 5
Deglaze with a splash of stock or water and reduce to a quick pan sauce, seasoning to taste.
- 6
Rest the Bacon, then serve smothered in the pan sauce with the buttery drippings pooled over.
Chef's tip
Taste and adjust the salt at the end; sauces concentrate as they reduce.
