Pork Churrasco

Pork kissed by the grill, marinated the brazilian way until the smoke and spice do all the talking. Ready in 32 minutes including prep.

Ingredients

  • Salt1 tsp
  • Garlic3 cloves, crushed
  • Lime1, juiced
  • Pork500 g
  • Smoked Paprika1 tsp
  • Palm Oil2 tbsp
  • Coarse Salt1 tbsp
  • Farofato serve

Optional extras

  • Fresh Cilantrohandful, to finish

Instructions

    Whisk the Palm Oil, lime juice, garlic, smoked paprika and salt into a quick marinade.

    Coat the pork completely and let it sit for at least 20 minutes (overnight is even better).

    Get the grill or griddle pan screaming hot.

  4. 4

    Grill the pork in a single layer, turning once, until charred in spots and cooked through.

  5. 5

    Rest for 5 minutes, then finish with fresh cilantro and extra lime.

Chef's tip

Don't move the pork for the first 3 minutes; a proper crust releases itself.
