Fresh, zingy and full of texture: pork tossed with herbs and a sharp citrus dressing. About 20 minutes from fridge to table.

Ingredients

  • Saltto taste
  • Onion1/2, thinly sliced
  • Fresh Cilantrohandful, torn
  • Olive Oil3 tbsp
  • Lime1, juiced
  • Mayonnaise150 g
  • Pork500 g
  • Golden Raisins50 g
  • Apple2, diced
  • Potato Sticks100 g

Instructions

    Whisk the lime juice with the olive oil, salt and pepper for a bright, simple dressing.

    Prepare the pork — slice, shred or cube it so every forkful gets some.

    Toss the pork with the onion, fresh cilantro and the dressing just before serving.

    Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lime if it needs lift.

Chef's tip

Taste and adjust the salt at the end; sauces concentrate as they reduce.
