Balinese Beef Satay

Fire-kissed skewers of beef — smoky outside, juicy inside, gone in minutes. About 37 minutes from fridge to table.

Ingredients

  • Yogurt3 tbsp
  • Lime1, juiced
  • Shallots3 cloves, crushed
  • Beef500 g, cubed
  • Ground Coriander1 tsp
  • Coconut Oil2 tbsp
  • Sweet Soy Sauce2 tbsp
  • Peanut Sauce200 ml
  • Kecap Manis2 tbsp

Optional extras

  • Fresh Cilantrohandful, to finish

Instructions

    Whisk the yogurt, coconut oil, garlic, ground coriander and lime juice into a marinade.

    Cut the beef into even 3 cm chunks and coat well; marinate 30 minutes minimum.

    Thread onto skewers with a little space between pieces so the heat can circulate.

    Grill over high heat, turning every few minutes, until charred at the edges and cooked inside.

    Slide off the skewers, rest 3 minutes, and dust with fresh cilantro.

Chef's tip

Taste and adjust the salt at the end; sauces concentrate as they reduce.
