
Cheese Pav Bhaji
Straight from the street, no compromise: loud chutneys, real crunch, and that chaat-masala tingle at the back of your tongue. Ready in 35 minutes including prep.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Turmeric Powder1/2 tsp
- Pav Bhaji Masala2 tbsp
- Pav Bread Rolls8
- Mixed Vegetables250 g, chopped
- Chaat Masala1 tsp
- Red Chili Powder1 tsp
- Cheese50 g
Optional extras
- Mint Leavesfor the hari chutney
- Fresh Cilantrofor the hari chutney
- Tamarind Paste2 tbsp, for the meethi chutney
- Jaggery1 tbsp, for the meethi chutney

Boil the vegetables until completely soft, then mash them rough — lumps are character.

Melt a generous knob of butter, fry onions to gold, add ginger garlic paste and the powders, then the mashed vegetables; bhunao 10 minutes, loosening with water to a glossy sludge.

Taste — it wants more butter, always.

Slit the pav, toast in butter on a hot tawa until crisp at the edges.

Serve the bhaji with a final butter slide on top, raw onion, lemon and the hot pav.
Chef's tip
Make both chutneys ahead; they keep a week in the fridge and improve overnight.
