Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Turmeric Powder1/2 tsp
- Potato4
- Pav Bread Rolls6
- Gram Flour1 cup
- Chaat Masala1 tsp
- Red Chili Powder1 tsp
Optional extras
- Mint Leavesfor the hari chutney
- Fresh Cilantrofor the hari chutney
- Tamarind Paste2 tbsp, for the meethi chutney
- Jaggery1 tbsp, for the meethi chutney
Instructions

Make the filling — spiced potato for vada pav, sweet-spicy for dabeli — and cool it.

Coat and fry until dark gold; the crust should crackle.

Butter and toast the pav, then build: chutney, the hot patty, more chutney, crushed peanuts.

Serve immediately, wrapped in paper like the street stall would.
Chef's tip
Make both chutneys ahead; they keep a week in the fridge and improve overnight.
