Straight from the street, no compromise: loud chutneys, real crunch, and that chaat-masala tingle at the back of your tongue. 35 minutes of mostly hands-off cooking.

Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Turmeric Powder1/2 tsp
- Curry Leaves1 sprig
- Pav Bread Rolls6
- Chaat Masala1 tsp
- Red Chili Powder1 tsp
- Crushed Peanuts1/4 cup
- Black-Eyed Peas250 g, chopped
Optional extras
- Mint Leavesfor the hari chutney
- Fresh Cilantrofor the hari chutney
- Tamarind Paste2 tbsp, for the meethi chutney
- Jaggery1 tbsp, for the meethi chutney
Instructions

Cook the sprouts/beans until just tender, then simmer in a fiery, thin tarri gravy with the masalas.

Build the bowl: base curry, then a layer of crushed papad or puffed mixture, peanuts, onion and cilantro.

Pour more hot tarri over at the table.

Serve with buttered pav on the side — this is a two-hands meal.
Chef's tip
Chaat is a race against sogginess — assemble at the last second.
