Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Turmeric Powder1/2 tsp
- Eggplant300 g, cut
- Chaat Masala1 tsp
- Red Chili Powder1 tsp
- Mustard Oil3 tbsp
Optional extras
- Mint Leavesfor the hari chutney
- Fresh Cilantrofor the hari chutney
- Tamarind Paste2 tbsp, for the meethi chutney
- Jaggery1 tbsp, for the meethi chutney
Instructions

Prepare the main — slice, mash or coat as it needs — and season with the masalas.

Make a thick gram-flour (or crumb) coating with water, salt and a pinch of chili.

Fry at 175°C until deep gold and crisp; drain on a rack, never paper.

Sprinkle chaat masala and serve with green chutney and fried green chilies.
Chef's tip
Chaat is a race against sogginess — assemble at the last second.
