Ingredients

  • Ginger Garlic Paste1 tbsp
  • Garam Masala1/2 tsp
  • Saltto taste
  • Onion1
  • Turmeric Powder1/2 tsp
  • Eggs4
  • Breadcrumbs1 cup
  • Chaat Masala1 tsp
  • Red Chili Powder1 tsp

Optional extras

  • Mint Leavesfor the hari chutney
  • Fresh Cilantrofor the hari chutney
  • Tamarind Paste2 tbsp, for the meethi chutney
  • Jaggery1 tbsp, for the meethi chutney

Instructions

    Prepare the main — slice, mash or coat as it needs — and season with the masalas.

    Make a thick gram-flour (or crumb) coating with water, salt and a pinch of chili.

  3. 3

    Fry at 175°C until deep gold and crisp; drain on a rack, never paper.

  4. 4

    Sprinkle chaat masala and serve with green chutney and fried green chilies.

Chef's tip

Make both chutneys ahead; they keep a week in the fridge and improve overnight.
