
Bruschetta
Tuscan antipasto of charred garlic bread piled with juicy marinated tomatoes, basil and your best olive oil — summer on a slice.
Ingredients

- Tomato4, diced and deseeded
- Garlic3 cloves (2 raw for rubbing, 1 minced)
- Fresh Basil8 leaves, torn
- Olive Oil3 tbsp, extra virgin
- Black Peppercorns1/2 tsp, crushed
- Baguette1, sliced 2 cm thick
- Balsamic Vinegar1 tbsp
Instructions

Toss diced tomatoes with minced garlic, torn basil, olive oil, balsamic vinegar, salt and pepper. Let marinate 15 minutes.

Toast baguette slices under the grill or on a hot pan until golden and crisp on both sides.

While still hot, rub each slice firmly with the raw garlic cloves — the bread acts like a grater.

Drizzle the toasts with a little olive oil.

Spoon the marinated tomatoes on top just before serving, letting the juices soak in slightly.

Finish with a torn basil leaf on each piece and an immediate grind of black pepper.
Chef's tip
Deseed the tomatoes or the juices will make the bread soggy within minutes — unless you like it that way, which many Italians do.
