- Vegetable Oil3 tbsp, good and fruity
- Cauliflower1 head
- Cheddar Cheese150 g
- Lime1/2, juiced
- Ground Cumin1/2 tsp
- Tortilla Chipsfor serving
- Cream Cheese200 g
Optional extras
- Fresh Cilantrohandful, to finish
Instructions

Prepare the cauliflower — roast, boil or mash it depending on what it is, until completely soft.

Beat it smooth with the olive oil, adding it in a slow stream for a silky texture.

Season with the garlic, lime juice, ground cumin and salt — taste as you go.

Swoosh onto a plate with a spoon-back of oil, a sprinkle of fresh cilantro, and serve with warm bread.
