
Goan Pork Sorpotel
Goan Pork Sorpotel — the kind of dish a region is known by, cooked the long way with nothing to hide behind. About 65 minutes from fridge to table.
Ingredients
- Ginger Garlic Paste1 tbsp
- Kashmiri Chili Powder2 tsp
- Garam Masala1 tsp
- Saltto taste
- Turmeric Powder1/2 tsp
- Vinegar4 tbsp
- Pork500 g, cubed
- Jaggery1 tbsp

Marinate the pork in yogurt, spices and salt for at least 30 minutes — overnight if you plan like a grandmother.

Brown the meat in hot fat so every piece picks up colour before any liquid enters.

Fry the onions deep gold, add the aromatics and ground spices, and bhunao until the oil separates.

Return the meat, add hot water to come halfway, and simmer covered until tender, 30-40 minutes.

Uncover, reduce to the consistency the name promises, and rest before serving.

The oil on the surface of the masala is your timer; don't rush past it.
