
Gujarati Kadhi
Tangy, silky kadhi — yogurt and gram flour simmered into comfort, then woken up with a ghee tadka. 40 minutes of mostly hands-off cooking.
Ingredients
- Yogurt2 cups
- Saltto taste
- Ginger1 inch
- Turmeric Powder1/2 tsp
- Fenugreek Seeds1/2 tsp
- Mustard Seeds1 tsp
- Curry Leaves1 sprig
- Asafoetida1/4 tsp
- Gram Flour3 tbsp
- Jaggery1 tbsp

- Fresh Cilantroto finish
Instructions

Whisk the yogurt with the gram flour, turmeric and water until perfectly smooth — lumps now are lumps forever.

Simmer on a medium flame 20-25 minutes, stirring now and then, until the raw flour taste cooks off and it turns silky.

In a separate pan, heat ghee and crackle the mustard and fenugreek with the chilies and curry leaves.

Pour the sizzling tadka over the kadhi and stir once — the hiss is the point.

Serve hot over rice; pakoras welcome.
Chef's tip
Keep stirring early on — kadhi settles and splits at the bottom if ignored.
