
Matar ka Nimona
Fresh peas crushed and simmered with potato, UP's spring ritual. A proper gravy curry — the kind that demands something bread-shaped for mopping. Serve with jeera rice or flaky parathas.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1 tsp
- Saltto taste
- Onion2, finely chopped
- Tomato3, chopped
- Ginger2-inch piece
- Green Chili2, slit
- Ghee3 tbsp
- Coriander Powder2 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil3 tbsp
- Potato3 medium, cubed
- Green Peas1 cup
- Red Chili Powder1 tsp
Optional extras
- Kasuri Methi1 tsp
- Fresh Cilantro2 tbsp, chopped
Instructions

Fry the onions with a pinch of salt till deep golden; eight to ten minutes, and worth every one.

Stir in the ginger garlic paste and cook a full two minutes.

Add the tomato with turmeric, chili and coriander powder; fry till the masala darkens and splits.

Stir in the green peas and potato, saute five minutes, then add hot water and cook covered until done.

Kill the heat and let it sit; finish with cilantro and a squeeze of lemon at the table.
Chef's tip
Whisked yogurt goes in off the heat or it will split.
