Bottle gourd and dal kura, Telugu lightness done right. Restaurant comfort, home kitchen effort — the masala does the heavy lifting. Best with buttered rotis and a cold kachumber salad.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Garam Masala1 tsp
  • Saltto taste
  • Onion2, finely chopped
  • Tomato3, chopped
  • Green Chili2, slit
  • Coriander Powder2 tsp
  • Turmeric Powder1/2 tsp
  • Vegetable Oil3 tbsp
  • Mustard Seeds1 tsp
  • Curry Leaves2 sprigs
  • Yellow Lentils (Toor Dal)1 cup, rinsed
  • Red Chili Powder1 tsp
  • Bottle Gourd2 cups, cubed

Optional extras

  • Kasuri Methi1 tsp
  • Fresh Cilantro2 tbsp, chopped

Instructions

    Fry the onions with a pinch of salt till deep golden; eight to ten minutes, and worth every one.

    Stir in the ginger garlic paste and cook a full two minutes.

    Cook the tomato down into the spices, wetting with water a spoon at a time, to a thick red masala.

    Turn the bottle gourd through the masala with the yellow lentils (toor dal), add warm water and bring to a gentle simmer.

    Kill the heat and let it sit; finish with cilantro and a squeeze of lemon at the table.

Chef's tip

Whisked yogurt goes in off the heat or it will split.
